Rocky Road Recipe

Post Christmas blues, everybody needs a little sweet treat now and then.

We made these delicious rocky roads delights and shared them with friends and family, and they went down a storm!

They are not for the faint hearted or those calorie counters… but they are bloody good!

Rocky Road Recipe

The ingredients you’ll need to make these tasty morsels:

Milk Chocolate:

  • 200 g unsalted butter , plus extra for greasing
  • 200 g milk chocolate (we used Galaxy bar)
  • 100 g clear honey
  • 250 g digestive biscuits
  • 100 g Malteasers
  • 100 g glacé cherries
  • 100 g toffee popcorn

White Chocolate:

  • 200 g unsalted butter , plus extra for greasing
  • 200 g white chocolate (we used Milkybar)
  • 100 g clear honey
  • 250 g oat biscuits
  • 50 g dried cranberries
  • 50 g freeze dry strawberries
  • 50 g marshmallows (no need to go for the super sized ones like we did, they were difficult to chop!)

And here’s what to do…

First, start by chopping your marshmallows (if needed) and add these to a mixing bowl along with the other sweets and treats to go in your rocky road mix.

Next, break your chocolate bar into a heatproof bowl and add the butter and honey.

Half-fill a small pan with boiling water and bring to a simmer. Place the heatproof bowl over the pan of water and melt the butter, chocolate and honey together. Continually stir until all is melted and free of any lumps and bumps (this can also be done in a microwave but ensure you keep a close eye on it so it doesn’t burn).

Now you’ll need to add the melted chocolate to your mixing bowl of broken treats and stir until combined.

Grease and line a cake tin (roughly 20cm x 25cm) and then pour the mixture into the lined tin. Pop in the fridge for at least 2 hours, or until set.

Once firm, remove from the fridge and then carefully remove from the tin. Cut into squares and try not to demolish them all in one sitting, your friends and family might like to try one of two.
